  • Use a mandolin to slice the cucumbers 1/8 inch thick. Set aside.
  • Dissolve the sugar substitute in a pot with the water and vinegar over medium heat. Let cool.
  • When cool, add the mustard seeds
    and cucumber slices.
  • Refrigerate for up to a month.
