Ingredients

  • 2 tablespoons almond flour
  • 1 tablepsoon coconut flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon salted butter
  • 1 egg
  • 2 teaspoons brown sugar substitute
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest

Instructions

  • Mix the dry ingredients in a small bowl.
  • Mix the melted butter, egg, lemon juice, and lemon zest in another small bowl.
  • Mix the wet and dry ingredients together.
  • Butter the insides of a large mug.
  • Add the batter to the mug and microwave it on high for about 90 seconds.
  • Check if your mug cake is done, then dig in!

Notes

Chef Jenn's Tips

  • Start with a mug that's much larger than the volume of cake batter. The cake will double in size as it cooks, and you don't want it spilling over the top of the mug.
  • Don't overmix the ingredients! It's fine if there are a few small lumps.
  • Garnish your keto Lemon Mug Cake with whipped cream and a bit of lemon zest.
  • Insert a toothpick or thin knife into the center of your mug cake to see if it is cooked. There should be a few clingy crumbs but no raw batter. If you see batter, give it another 10-15 seconds to cook.
