Creamy Keto Cucumber Salad with Dill

Creamy and with a punch of flavor from fresh dill, this terrific salad is a summertime staple!

Ingredients

  • 1 English cucumber
  • 1/2 tbsp salt
  • 2 tbsp sour cream
  • 1 tbsp finely chopped fresh dill or 1/2 tbsp dried dill

Instructions

  • Wash the English cucumber and snip off the ends.
  • Using your vegetable peeler, peel long, thin strips of cucumber, turning the cucumber around as you peel to get even strands. Peel it all the way down to the seed area in the middle.
  • Put the cucumber strands into a strainer and toss with the salt. Let it sit over a bowl to drain for about 40 minutes. Discard the liquid.
  • Lightly squeeze the drained cucumber, to remove excess liquid.
  • Toss the cucumbers with sour cream and dill and serve!

Notes

The sodium values in this recipe are just a guess because most of the salt will drain away as the cucumbers sit.
