Ingredients

  • 1/4 cup sliced shallots
  • 1 clove garlic minced
  • 4 cups grape tomatoes
  • 2 cups mozzarella balls
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/4 tsp red pepper flakes
  • 2 tbsp chopped fresh basil
  • 2 tbsp chopped fresh parsley
  • pinch of salt and pepper

Instructions

  • Add the shallots, garlic, tomatoes, mozzarella balls, pepper flakes, and herbs to a medium size mixing bowl.
  • Make the dressing by whisking the red wine vinegar into the olive oil to create an emulsion.
  • Mix the salad with the vinaigrette, season with a pinch of salt and pepper (optional), and serve!
