Keto Taco Casserole

  • 1 pound lean ground beef
  • 1/2 cup yellow onion diced
  • 1 tbsp garlic minced
  • 14.5 ounce Rotel tomatoes with chilis 1 can
  • 1/2 cup sliced olives
  • 2 tbsp Keto Taco Seasoning
  • 1/2 tsp salt or to taste
  • 2 cups shredded cheddar


  • Brown the beef in a large skillet. Drain off all but 2 tbsp of fat.
  • Add the onions and garlic and cook until the onion is translucent. About 5 minutes.
  • Add the Taco Seasoning and the can of Rotel tomatoes. Mix well and heat through.
  • Add the olives and season with salt.
  • Put the mixture into an oven-safe casserole dish. Top with cheese and bake at 375-F for about 15 minutes or until the casserole is hot and bubbly.
  • Serve with your favorite toppings.


The nutritional value for the taco seasoning has not been included in this recipe. Be sure to add the values for 2 tbsp of whatever brand you use.
