Made quickly with a mini waffle maker, chaffles have been all the rage for a while now. I stumbled upon this recipe purely by accident, but am so delighted with how they turned out! They’re my new favorite chaffle and are perfect for sandwiches (chaffwiches), or just nibbling as a snack. Hungry? Let’s get cooking!

How to Make A Chaffle

  1. Take one egg white (from a large or extra large egg) and froth it with a fork. Basically whisk the heck out of it until it is quite frothy.
  2. Add the almond powder and mozzarella cheese.
  3. A bit of cooking spray on the Dash waffle maker will help it release or trust in the chaffle gods and add half the mixture to the chaffle maker.
  4. Close the lid and cook it until it is golden brown. Repeat!

What Makes this Crispy Keto Chaffle Recipe So Special?

There are a couple of things going on that makes this chaffle a bit different from the millions other chaffle recipes.

  1. The egg white acts as a binder for the cheese, holding the cheese together so it can get nice and crispy.
  2. The almond powder, what little there is of it, gives the chaffle a bit more substance.
  3. Mozzarella is the perfect cheese for this. It has a high enough fat content that it’ll get golden brown, but it still holds together nicely.

Chef Jenn’s Tips To Make The Best Crispy Keto Chaffle REcipe

  • Make sure you get the egg good and frothy. This is the only thing holding the cheese together so whisk it really well.
  • Use super-fine ground almond flour so you don’t have any gritty almond texture.
  • Cook the chaffle until it wants to easily release. Use a bit of cooking spray on the chaffle maker if yours are prone to sticking.
  • Let the chaffle cool for a minute or three before eating but don’t stack them up or the humidity will sog them.

How To Serve

Chaffles make excellent chaffle sandwiches. Use all your favorite sandwich ingredients to make an awesome chaffwich like this French Dip, Cubano Chaffwich, or just spread them with keto mayo and top with your favorite sliced meats.

Or, use them in place of bread in an Egg-in-a-Hole, eat them like you would a waffle with butter and sugar-free syrup, or just nibble on them as a snack.

I also love serving chaffles alongside a hearty beefy vegetable soup, with a good casserole to mop up all the sauce, or with a bit of garlic butter on top they’re the perfect match for an Italian sausage dish.

Can I freeze keto chaffles?

Absolutely – they freeze like a dream!

To freeze them, just pack them loosely into a freezer-safe zipper-top bag. Freeze them for up to three months.

To thaw, simply pop them into a toaster or toaster oven for a few minutes to crisp up again.

What is a chaffle?

Chaffles are a basically a cheesy waffle. Chaffles are typically gluten-free and are made with almond flour as a binder. They are cooked in a mini waffle maker and vary from eggy and dense to light and crispy.

Crispy Chaffles

Light, crispy and delish, these Crispy Chaffles are a new twist on an old favorite.

Ingredients

  • 1 egg white
  • 1/2 cup mozzarella cheese shredded
  • 2 tbsp almond flour superfine grind

Instructions

  • Whip the egg white with a fork or whisk until it is frothy and light.
  • Add the almond flour and mozzarella cheese. Mix well.
  • Add half the mixture to the preheated chaffle maker. Cook according to manufacturers directions or until the chaffle is golden brown and releases easily.
  • Repeat with the remaining batter and enjoy!

    I love this recipe and I quadruple it and make 8 at a time using 3/4 cup egg whites. I have also added cinnamon and monk fruit sweetener to the recipe. They make a great substitute for pizza crust too. Just top with your favorite sugar free pizza sauce and favorite toppings, then bake in the oven.

    • Hi! I use superfine almond flour from Costco – the Kirkland brand. I have found that some almond flours are stronger than others – I guess it’s a matter of trying them out! Look for superfine grind if you can. Hope you find something that works for you! You could always add a bit of seasoning to the chaffles – Italian seasoning, Cajun, etc. about 1/2 teaspoon to the recipe should add a touch of flavor and perhaps mask the almond flavor.     I just made this recipe and it is hands down my favorite for a basic chaffle so far. I used 4 tbsp coconut flour to double the recipe rather than almond as I already had it on hand. It took way more egg whites than I anticipated but I buy them in cartons from Aldi so it was not a problem although I measured with my heart. I used mozzarella as suggested as I have read in other places that it gets crispier than other cheeses. I added garlic powder, season salt, and pepper to make them savory. I somehow ended up with 5 chaffles, but they were delicious so the more the better!

    My chaffles were a complete disaster😂. I don’t use processed vegetable oils and thats what’s in non stick sprays. I used lard and my waffle iron has never worked for me. It stuck closed, my husband had to pry it apart. The edges looked light golden brown but it stuck to both sides. We are throwing everything out. What little we were able to scrape off to taste was not worth doing again. I will stick to making my keto french crepes with our choice of healthy fillings. Thank you very much. The waffle iron is going to free cycle group after we clean it thoroughly soaking in the sink. Hopefully we will get all the goo off.😂

    • Oh no! I’m sorry your waffle iron gave you problems. I use a mini waffle iron with a non-stick plate and it works just fine every time!
