Do not skip the salt. Cheese is already salty, but this recipe genuinely needs a tiny pinch of it to enliven all the flavors together.
Use a crumbly blue cheese here, gorgonzola specifically, not a creamy blue cheese like cambozola, the two behave very differently once blended. Pulse everything in the food processor 4 to 6 times, until smooth, scraping down the bowl halfway through if needed. Bring the dip to room temperature before serving, both the flavor and the texture are noticeably better that way than straight out of the fridge.
Fennel and blue cheese genuinely work well together, an underrated pairing if you have not tried it. This dip keeps for several days in the fridge, making it a genuinely great make-ahead choice for a party, though it does not freeze well, so keep that batch fresh instead. It is also excellent alongside Buffalo wings, not just as a vegetable dip.

Put the blue cheese, cream cheese, and heavy whipping cream into a food processor or high-speed blender.

Pulse 4 to 6 times, until smooth, scraping down the bowl halfway through if needed. Add a small pinch of salt and pepper, mix well, and serve at room temperature.
